Ingredients:
3 Tablespoon(s) oil, olive
2 chicken breasts, boneless skinless
1 Pound(s) sliced andouille
3 bell pepper
2 celery
1 pepper, jalapeno
1 onion, white
4 Clove(s) garlic
14 Ounce(s) 1 can tomatoes, diced canned
4 Cup(s) chicken broth
1 1/2 Cup(s) uncooked rice, white
2 Tablespoon(s) cajun seasoning
1/4 Teaspoon(s) cayenne pepper
1 bay leaves
1 Pound(s) shrimp
1/2 Cup(s) sliced onion, green
Directions:
Saute the sausage and chicken until browned and set aside.
Saute the veggies until soft.
Add rice, liquids, and seasonings.
Cover and cook on the rice setting.
When done, add the shrimp and okra for 5 more minutes until shrimp is pink and opaque. Add the chicken and sausage back in.
Adjust seasoning to taste.
Garnish with chopped green onion and hot sauce.
