Ingredients:
2 chicken breasts, boneless skinless
2 lime
2 Tablespoon(s) chunky peanut butter
4 Clove(s) garlic
2 chili, jalapeno
Directions:
Score the chicken breasts in a checkerboard pattern about halfway through the breast to allow flavor to penetrate and for it to cook faster.
Sprinkle with olive oil, salt and pepper.

Zest two limes and sprinkle onto the chicken. Place into a bare skillet over medium high heat, scored side down.

In a small bowl, mix the peanut butter and the juice of 1.5 limes.
Add about 1-2 tablespoons of water to get to a pourable consistency.
Add grated garlic and chopped chili and mix.

Flip the chicken. Pour the sauce completely over the chicken. Place the pan in the oven on broil for 5 to 6 minutes.

Garnish with lime zest and olive oil and the crispy peanut butter sauce.
