Difficulty: Easy
Preparation Time: 60+ Minutes
Number of Servings: 4

Ingredients:
2 Pound(s) sauerkraut
2 Slice(s) bacon
1 Cup(s) low sodium chicken broth
10 juniper berries
2 bay leaves
2 Tablespoon(s) butter, unsalted
1 1/2 Pound(s) sliced bratwurst
1 peeled and grated apple, granny smith
4 Teaspoon(s) sugar, brown
Directions:
Combine sauerkraut, bacon, broth, juniper berries, and bay leaves in microwave safe dish. Cover tightly with plastic wrap. Cook on high until sauerkraut softens, about 10 minutes.

Melt butter in a large, high-wall skillet (not cast iron). Add the sliced bratwurst and brown on all sides, about 3 minutes total. Transfer to a plate and set aside.

Add onion and salt to skillet and return to medium heat until onion is softened, about 5 minutes. Stir in sauerkraut mixture, apple, and brown sugar. Bring to a simmer.

Nestle in the bratwurst, cover, and reduce heat to a simmer. Cook until bratwurst are done, about 10-12 minutes.

Discard bay leaves and bacon. Season with salt and pepper to taste.
