Preparation Time: 10-30 Minutes
Number of Servings: 4

Ingredients:
2 Apple, Gala
4 Turnip, Hakurai
1 Cup(s) onion, pearl
1 Cup(s) Vinaigrette, concord grape
4 pork chop
Directions:

Pork chops
 Gala apples
 Hakurei turnips
 Onions
 Concord Grape Vinaigrette

1.Warm a heavy-bottomed sauté pan over medium- high heat. Season pork chops with salt and pepper and carefully add pork chops to the heated pan, along with a bit of canola oil, bacon fat, or lard.

2. Allow chops to caramelize and brown on both sides, cooking the meat until just firm/medium, then remove from pan and keep warm. Turn the pan’s temperature down to medium.

3. Add to the pan 2 - 3 sliced baby onions, and quartered Hakurei turnips, allowing them to cook until soft and slightly caramelized. Then add 1 - 2 sliced and peeled Gala apples and just heat through.

4. Turn off heat and swirl in a couple T. of water and some Concord Grape Vinaigrette. Season with salt and pepper, then add 1 - 2 T. of whole unsalted butter. Allow it to melt and incorporate. Serve with pork chops.
