Ingredients:
1 (because it's light); you choose pepper, habanero
1 very important! ("celery seed") ajwain seeds
1 stems of cilantro
1 Pinch(s) crushed between palms cumin seeds
1 Tablespoon(s) crushed between palms coriander seeds
1 flour, gram
1 veggies of choice potato, Idaho
Directions:
Hassan says everyone has their own pakora recipe. He likes a light colored batter.

Take all the ingredients and add water till fairly thick. Blend with hand blender or regular blender (I'd say the latter if you add cilantro stems).

Heat canola oil in a deep pot on the stove.

Dip veggie chunk in batter and tap on the side of the bowl to release excess. (If thin slice of potato, tap the narrow edge, not the flat edge.)

Fry in oil. Enjoy with chutney.

Don't reuse frying oil because it breaks down and turns rancid.
