Ingredients:
3 Tablespoon(s) Zatar
2 Teaspoon(s) dried oregano
1 1/4 Teaspoon(s) sugar
2 Teaspoon(s) freshly ground black pepper
1 Tablespoon(s) kosher salt
3 Pound(s) mixed chicken, pieces with bones
10 Clove(s) peeled garlic
2 Tablespoon(s) oil, olive
1/4 Cup(s) lemon juice
1 Tablespoon(s) lemon zest
Directions:
Mix the dry spice ingredients.
Place the chicken pieces on a baking pan.
Sprinkle the spice rub generously on the chicken. Then roll the chicken to coat both sides with spice. Place chicken skin side up.
Place the garlic in the center of the pan, sheltered by the chicken.
Roast in the oven at 450 degrees for 30 to 40 minutes.
Move the chicken to a serving plate.
Mash the garlic into a rough paste. Pour 1/3 cup of water onto the baking sheet. Scrape the brown bits off the sheet and into the garlic paste. Pour into a serving bowl, and add 2 tablespoon more oregano, olive oil, lemon juice, lemon zest.

Serve chicken and pour sauce over the top.
