1/4 Cup(s) chopped parsley
1/4 Cup(s) chopped basil leaves
1 Tablespoon(s) dried oregano
1 Tablespoon(s) dried thyme
4 Clove(s) minced
1 zest of lemon
2 Tablespoon(s) oil, olive
1 Dash(s) to taste salt
1 Dash(s) to taste freshly ground black pepper
2 Pound(s) beef flank steak
In a blender, add first 8 ingredients (parsley through salt and pepper); blend until smooth.
Place flank steaks on a large platter. Rub with herb mixture on both sides.
Serve with baked yams.
