Difficulty: Easy
Preparation Time: 30-60 Minutes

Ingredients:
1 Cup(s) flour
1 Cup(s) whole grain flour
2 Teaspoon(s) baking powder
1 Teaspoon(s) cinnamon
1/2 Teaspoon(s) baking soda
1/4 Teaspoon(s) salt
1 egg
3/4 Cup(s) packed sugar, brown
3 mashed ripe banana
6 Tablespoon(s) oil, vegetable
1 Teaspoon(s) vanilla extract
Directions:
Preheat oven to 375 degrees. Grease standard 12-muffin tin or line with paper cups.

In a small bowl, whisk together the flour, whole grain flour, baking powder, baking soda, cinnamon, and salt. Stir in chocolate chips.

In a large bowl, whisk together the egg, brown sugar, mashed bananas, vegetable oil, and vanilla.

Add the flour mixture to the banana mixture and stir with a few light strokes until just blended. Do not overmix. Divide batter among the muffin cups.

Bake until a toothpick inserted comes out clean, about 18 minutes. Let cool for 2 to 3 minutes before removing from the pan. If not serving hot, let cool on a rack.
