Ingredients:
4 any kind fish fillet
4 (fresh) or any herb thyme
2 grated handfuls cheese, parmesan
2 Clove(s) pressed garlic
2 beaten egg
1 halved lemon
1 oil, vegetable
2 Slice(s) stale bread, white
Directions:
This is adapted from Jamie Oliver's Essex Fried Rabbit.


Heat oven to 350 degrees.

Whiz the bread up to make fine bread crumbs with half the grated parmesan.

In three shallow bowls or plates, sift some flour onto one and season it, put the beaten eggs in another and the bread crumb/garlic mix on the third.

Toss fillets in flour, dust off excess flour and put in to the beaten eggs, then onto the bread crumb mix. Sprinkle with thyme leaves and remaining Parmesan, then roll and pat mix onto fish pieces.

Put fillets on a baking dish and bake for (45?) minutes, until fish flakes.

Dust with a little sea salt, and serve with lemon halves.
