Ingredients:
1 Can(s) coconut milk, thick
3 Cup(s) chicken stock
1/4 Teaspoon(s) crushed chili, red
1 1-inch peeled and chopped ginger root
1 Teaspoon(s) (or 1T fish sauce) Sea salt
1 Teaspoon(s) (or coconut sugar) sucanat
2 or lemons juice of # lime(s)
1 Tablespoon(s) fresh basil leaves
1 Cup(s) cooked and chopped chicken meat

Optional Ingredients:
1/2 Cup(s) rice, brown basmati Add to shopping list

Directions:
Place all ingredients except chicken in a medium pot over high heat, bring to a boil, then reduce heat and simmer for 1-1/2 hours, or until rice is thoroughly cooked. (If not using rice, simmer for about 30 minutes.) Add chicken 15 minutes before serving.

("Quick and Easy Weight Loss" version: omit rice for 299 cal.)
