Ingredients:
1 Tablespoon(s) oil, vegetable
4 Tablespoon(s) chopped onion, yellow
1 Clove(s) diced garlic
1 Cup(s) grated cheese, cheddar
1 cubed potato
2 egg
1 Slice(s) dry bread, white
1 Teaspoon(s) oregano
1 Teaspoon(s) paprika
Directions:
Heat oil in a cast iron frying pan.

Bake the potatoes in the microwave, then cool under running water.

Fry the chopped onion until translucent. Add the garlic when the onions are done.

Cube the potatoes and add to the frying pan, cooking until they are no longer crunchy. Cover to cook the potatoes faster.

When the potatoes are nearly done, add two tablespoons of butter to the pan and mix to coat the potatoes. Then let them cook until brown, turning once or twice.

Add the paprika, oregeno, and salt while the potatoes are cooking.

When the potatoes are done, tear the bread into small pieces and add to the pan.

Crack the eggs into the frying pan. Stir frequently while the eggs are cooking.

Add the cheese and continue to stir.

When the egg is cooked, add more salt and pepper.
Serve hot.
