Directions:
Cut potatoes into 1 inch chunks and place in a microwave-safe dish. Combine ingredients to make the marinade and pour half over the potatoes. Par-cook the potatoes in the microwave, about 1.5 minutes per potato. Preheat oven to 375. Arrange the chicken and potatoes in a large greased baking pan to maximize contact between the food and the dish. Pour marinade and potatoes over the chicken. Cook at 375 for 30 minutes. Flip the chicken and baste with marinade. Cook for another 35 minutes. Garnish with lemon zest, olives and more lemon juice. |
