Directions:
In a large pot, brown the beef and set aside. Use the remaining grease to saute the vegetables: onion, bell pepper, jalapeno, garlic. Saute until vegetables are soft. Add the beef stock and deglaze the bottom of the pot. Add the remaining ingredients: cooked beef, canned tomatoes, beans, green chilies, chili powder, paprika, cumin, apple cider vinegar. Let simmer for about 30 minutes. Serve with chopped white onion, grated cheese, sour cream, and crumbled tortilla chips. |
