Ingredients:
14 3/5 Ounce(s) king arthur bread flour
2 1/4 Teaspoon(s) instant yeast
10 1/2 Ounce(s) ice water
4 Teaspoon(s) honey
1/4 Cup(s) oil, olive
1 1/4 Teaspoon(s) salt
Directions:
In a large mixing bowl with a dough hook, add flour and yeast. Add ice water, honey, olive oil.
Mix a medium for 1 to 2 minutes, until the flour absorbs the water.
Let rest for 10 minutes.

Mix on medium for about six minutes until a dough ball forms and clears the sides of the bowl.

Oil your hands and the counter. Kneed to shape the dough.
Divide into eight pieces.
Shape into balls.

Grease a baking pan and place on the pan and spray with more oil.
Let sit in the fridge for 16-24 hours to ferment.

Generously coat each ball with flour and roll out to a pita shape. You want 7 inch rounds. Brush off excess flour.

Bake on a pizza stone for 1 to 3 minutes.

It should puff up like a balloon.
Roll over to the other side for browning on both sides.
Bake about another minute.
