Directions:
Remove the stems and grate into a bowl, avoiding the seedy part. Add salt and mix with your hands. Set aside for 10 minutes. In a large bowl, add yogurt, oil, garlic, vinegar, dill, and mint. Mix. Squeeze the remaining moisture from the cucumbers. Chop the cucumber and add to the sauce. Add 2 tsp of reserved cucumber liquid and .5 tsp of salt. Garnish with dill and mint and olive oil. |
