Directions:
If available, used reserved cooking water from steamed vegetables. In a large sauce pan over medium heat, add water, shallot, vinegar, salt, sugar. Reduce down to about 1.5 tablespoons for about 2 minutes, whisking occasionally. Add six tablespoons of unsallted butter, one tablespoon at a time, whisking until melted. Toss vegetables in the sauce. |
