Pro tips from Hassan.

His doctor tells him to eat brown basmati rice, but he loves white rice.

Always rinse the rice in 4 changes of water to get all the starches off.

Always soak the rice.
White rice: 40 mins.
Brown rice: 1 hour or longer.

Drain the rice by shaking it in a sieve.

After cooking, (or while cooking), check a grain of rice. If it has a split along the grain, it's overcooked.

Hassan sold me Royal brand basmati rice (white and brown). They are extremely proud of their long, long rice grains. Here are their instructions:
White basmati rice:
1. Soak rice 15-30 minutes for extra length (optional)
Gentle Boil: Bring 1 cup rice and 6-8 cups water to boil, stirring occasionally. Reduce heat and boil gently, uncovered, 12-14 minutes. Drain well and serve.
Covered pan: Bring 1 cup rice and 1.5 cups water to boil, sitrring occasionally. Lower heat, cover and simmer 12-14 minutes. Remove from heat and stand covered, 5-10 minutes.

Brown basmati rice:
Rinse in 1 or 2 changes of water.
Place measured rice in pot, and add measured water (that's really helpful), oil and salt. Bring to a boil, uncovered, then simmer for about 20 minutes.
