Ingredients:
1 Cup(s) panko bread crumbs
1 1/4 Pound(s) 26x30 shelled, no tails shrimp, jumbo
2 Tablespoon(s) mayonnaise
1/4 Teaspoon(s) freshly ground black pepper
1/8 Teaspoon(s) salt
1/8 Teaspoon(s) cayenne pepper
3 finely chopped scallions
3 Tablespoon(s) oil, canola
Directions:
Pulse the bread crumbs in a food processor.
Set the bread crumbs aside.
Add one cup of shrimp, mayo, pepper, salt, cayenne to a food processor and pulse about 8 times.
Add the rest of the shrimp and pulse about 4 times.
Transfer to a bowl.
Add scallions and mix.
Form into half cup patties.
Dredge in bread crumbs.
Heat the oil to a shimmer.
Cook about 3 to 5 minutes on a side.
Serve on buns with lettuce and tartar sauce.
