Directions:
Place noodles in a bowl with boiling water and let sit for 8 minutes stirring occasionally. Drain noodles and rinse well. Toss the noodles with oil to prevent sticking. Heat a skillet with 2 tablespoons of oil Cook dried shrimp for 3 minutes until golden Move shrimp to a large bowl. Add a teaspoon of oil to skillet Cook garlic and scallion whites in skillet for 1 minute and place in bowl Add 2 teaspoons of oil and cook shrimp on high for 3 minutes Add eggs to pan with shrimp and stir for 30 seconds then add to bowl Add 2 teaspoons of oil to skillet, and drained, rinsed noodles, and tamarind sauce. Cook over high heat for 3 minutes. Sauce will absorb into noodles, place in bowl. Add 2 teaspoons of prepared vinegar and peppers. Add the remaining scallion greens Add pickled radish Add bean sprouts Toss together. Serve and garnish with peanuts, cilantro, vinegar, sugar, and lime. |

Directions: Dissolve the sugar and salt in the water by warming in the microwave. Cut the radishes into matchsticks and place in the water. Allow to sit for 15 min |

Directions: Whisk ingredients until sugar dissolves. |

4 peeled shrimp, small 1/8 Teaspoon(s) sugar 1/8 Teaspoon(s) salt |
Directions: slice the shrimp into even pieces about .5 inches on a side stir with sugar and salt to coat evenly distribute on a plate and cook at 50% for about 3 minutes until the shrimp is dried and reduced in size by half |
