Ingredients:
1 Cup(s) spelt berries
1 Tablespoon(s) oil, vegetable
1/2 Cup(s) onion flakes, dried
2 Cup(s) or vegetable broth chicken broth
1/4 Teaspoon(s) pepper, black
1/4 Teaspoon(s) thyme
1 1/2 Tablespoon(s) parsley flakes
1/2 Pound(s) washed, chopped mushroom
Directions:
** I would sub 1 whole fresh onion, chopped; and maybe 1/2 bunch fresh chopped parsley instead of the dried versions you can buy from Bob's Red Mill.

In a large saucepan, saute spelt and onion in oil until spelt begins to turn golden brown, about 3-4 minutes. Add prepared mushrooms and saute for 5 more minutes.

Add broth and herbs and bring to a boil; reduce heat and cover. Simmer 40 minutes, stirring occasionally, until liquid is absorbed.

If pilaf becomes too dry during cooking, add a little hot water. Remove from heat; serve hot.
