Directions:
In a large saucepan, saute spelt and onion in oil 3-4 minutes. Add prepared mushrooms and saute 5 more minutes. Add broth and herbs and bring to a boil; reduce heat and cover. Simmer for 40 minutes, stirring occasionally, until liquid is absorbed. If pilaf becomes too dry during cooking, add a little hot water. Remove from heat. Serve hot. |
