Ingredients:
1 Cup(s) spelt berries
1 Tablespoon(s) oil, vegetable
1/2 Cup(s) onion flakes, dried
1/2 Pound(s) chopped mushroom
2 Cup(s) chicken stock
1/4 Teaspoon(s) freshly ground black pepper
1/4 Teaspoon(s) thyme
1 1/2 Teaspoon(s) parsley flakes
Directions:
In a large saucepan, saute spelt and onion in oil 3-4 minutes. Add prepared mushrooms and saute 5 more minutes. Add broth and herbs and bring to a boil; reduce heat and cover. Simmer for 40 minutes, stirring occasionally, until liquid is absorbed. If pilaf becomes too dry during cooking, add a little hot water. Remove from heat. Serve hot.
