Ingredients:
4 arctic char fish fillet
1/4 Cup(s) soy sauce
1/2 Cup(s) vinegar, rice
1 Cup(s) chicken stock
1 Tablespoon(s) fresh grated ginger
2 Clove(s) minced garlic
3 Tablespoon(s) butter, unsalted
Directions:
Baked Arctic Char

4 Arctic Char fillets, about 6oz ea

1/4 cup soy sauce

1/2 cup sake (can substitute rice wine vinegar)

1 cup chicken stock

1 Tbls grated fresh ginger

2 cloves of garlic, minced

3 Tbls unsalted butter

olive oil for brushing the fish

freshly ground pepper and salt, to taste

Preheat oven to 425 degrees. In a medium saucepan over moderate heat, combine soy sauce, sake, stock, ginger and garlic. Bring to a boil, reduce the heat, and simmer until reduced by half, about 20 minutes. Whisk in butter and remove from heat. Brush fillets with olive oil, salt and pepper. Bake fish in preheated oven for about eight minutes, basting twice with prepared sauce. Transfer the fish to serving plates. Spoon remaining sauce over fish.
