Ingredients:
1 Pound(s) chocolate, semi-sweet chips
1 1/4 Cup(s) cream, heavy
1 Cup(s) cocoa powder
1 Cup(s) chopped nuts
Directions:
Heat whipping cream to scalding (185 degrees). Pour chocolate chips into a mixing bowl. Pour hot cream over chocolate chips and whip with a whisk until it turns into a ganache. (Can add peppermint or other flavoring to the ganache).

Chill the ganache for 6 hours.

Form the truffles using a melon baller. Roll the truffles in whatever you like -- cocoa powder, jimmies, nuts, chili powder ....
