Ingredients:
1/2 Cup(s) soaked cold H20, cut 3-in pieces glass noodles
2 Cup(s) water
1/4 Cup(s) minced pork
1/4 Cup(s) (bite size pieces) wood ear mushroom
2 peeled, sliced shallot
2 Clove(s) sliced garlic
1 stalk chopped cilantro
1/2 sliced tomato
1 Tablespoon(s) lime juice
1 1/2 Tablespoon(s) fish sauce
3 chopped small green chili, bird's eye
Directions:
Spicy glass noodle salad is often served as a refreshing snack in Thailand. It also makes a great party dish as you can serve it at room temperature.

1. Combine pork, garlic, and cilantro, and chop well to combine.

2. Bring water to a boil in saucepan, add pork mixture and mushrooms. Simmer for about 3 minutes, until cooked.

3. Add glass noodles in a saucepan.

4. Strain or use slotted spoon to transfer pork, mushroom, and glass noodle mixture to a bowl. Add other ingredients.

5. Garnish with cilantro and Chinese celery leaves, and serve.
