Did you press the button to scale down the recipe first? Make the meat sauce Melt the butter in a heavy skillet (don't use cast iron). Add the grated onions and salt to the melted butter. Saute onions over high heat and stir occasionally until translucent. Add the ground beef to the skillet. Break up the meat with a wooden spoon until the texture is even. Cook until browned. Add pepper, cinnamon, and nutmeg. Stir in the wine, tomato sauce, water, and sugar. Bring the meat sauce to a boil. Lower heat to simmer and cook for 1.5 hours. Remove from heat. Stir in grated Romano cheese. Mix well. Make the pasta Pour 3 quarts of water into a deep pot with lid. Bring the water to a rapid boil. add the salt and the macaroni. Boil the macaroni for 15 to 18 minutes until nearly done. It should be a little undercooked. Remove the macaroni from the heat and drain into a colander. Return the macaroni to the pot. Add the beaten eggs and the grated cheese to the macaroni and mix thoroughly. Make the cream sauce Pour 4 cups of the milk into a saucepan. Mix cornstarch with the remaining cup of milk. Mix well until the cornstarch dissolves. Add the cup of milk with dissolved cornstarch to the 4 cups of milk in the saucepan. Add salt. Cook over high temperature, stirring constantly with a wooden spoon until milk comes to a boil and has thickened (be careful not to scorch milk). Remove from heat. Add butter. Gently stir in butter until it melts completely. Assemble and bake Grease a 17 x 11 x 2 inch pan with butter. Layer half of the macaroni into the bottom of the pan. Spoon the meat sauce evenly on top of the layer of macaroni. Layer remaining macaroni on top of the meat sauce. Spoon cream sauce evenly on top of the second layer of macaroni. Bake in a preheated 375 degree oven for approximately 30 minutes until golden brown. Let sit about 20 minutes before cutting and serving. |
