Directions:
Preheat oven to 375 degrees. In a large bowl, combine hash browns, 1.5 cups cheese, yogurt, thyme, salt and pepper. Place mixture in a greased 8-inch square baking dish. Pack the baking dish as full as possible. The mixture shrinks down by about half when baking. Bake 45 minutes. Remove from oven and sprinkle with remaining cheese; bake until cheese is melted, 3 to 5 minutes. Top with bacon and green onion. Serve with salsa and sour cream. |
