Ingredients:
1/8 Teaspoon(s) peppercorns
1/8 Teaspoon(s) roasted cumin seeds
1/4 Teaspoon(s) roasted coriander seeds
1/4 Teaspoon(s) roasted cloves
1/4 Teaspoon(s) roasted cinnamon
1/4 Teaspoon(s) roasted cardamom seeds, green
1/4 Teaspoon(s) roasted mace
5 Lg., seeded, soaked 10 mins chilies, red
1/4 Teaspoon(s) chopped galanga root
1/2 Tablespoon(s) lower 1/3, crushed & chopped lemongrass
1/2 Tablespoon(s) peeled, crushed garlic
1/2 Teaspoon(s) peeled, crushed shallot

Optional Ingredients:
1/8 Teaspoon(s) shrimp paste Add to shopping list

Directions:
1. Place all of the dried ingredients (+ soaked chilies) in a mortar and grind with pestle till they are a powder. (Or use blender.)

2. Add galangal, lemongrass, coriander root and pound again till smooth.

3. Add garlic, shallot, shrimp paste (optional) and chilies, and pound till smooth.
