Ingredients:
4 sweet potato
4 Tablespoon(s) butter
1/2 Teaspoon(s) salt
1/2 Teaspoon(s) freshly ground black pepper
2 Tablespoon(s) chopped sage
Directions:
We usually serve this type of sweet potato dish in the fall and winter when most of the other vegetables are gone for the season. They were available this week, so we put them in the boxes. We like to serve this with pork or chicken gumbo, usually as a garnish.

1. To prep the potatoes, wash them well and bake in a 350-degree oven until very soft and the skin is separating from the flesh.

2. Remove from oven and cool. The sweet potato peel will almost fall off now, making it very easy to remove.

3. Once skin has been removed, cut sweet potatoes into 1.5–2 inch rounds. At the Kitchen, we usually just deep fry them to order until they reach a mahogany caramelized color. But they can be caramelized in a nonstick skillet over medium to med-high heat with a small amount of oil until deeply caramelized on both sides.

4. Once this is done, remove from heat and dress with small amount of whole butter, salt, ground black pepper, and chopped sage.
