Ingredients:
1 1/2 Cup(s) flour
1/2 Cup(s) whole grain flour
2 Teaspoon(s) baking powder
1 Teaspoon(s) cinnamon
1/2 Teaspoon(s) baking soda
1/4 Teaspoon(s) salt
3/5 Cup(s) chopped walnuts
1 egg
3/4 Cup(s) packed light sugar, brown
1 3/10 Cup(s) mashed ripe banana
6 Tablespoon(s) oil, vegetable
1 Teaspoon(s) vanilla extract
Directions:
Position a rack in the center of the oven. Preheat the oven to 375 degrees farenheit. Grease a standard 12-muffin pan or line with paper cups.

Whisk together thoroughly:
flour
whole wheat flour
baking powder
ground cinnamon
baking soda
salt
ground nutmeg

Stir in:
chopped walnuts

Whisk together in a large bowl:
egg
brown sugar
mashed ripe bananas
vegetable oil
vanilla

Add the flour mixture and mix together with a few light strokes just until the dry ingredients are moistened. Do not overmix; the batter should not be smooth.
Divide the batter among the muffin cups. Bake until a toothpick inserted in 1 or 2 of the muffins comes out clean, about 18 minutes.
Let cool for 2 to 3 minutes before removing from the pan.
If not serving hot, let cool on a rack. Serve as soon as possible, preferably the day they are baked.
