Ingredients:
2 1/4 Cup(s) (can sub white flour as choose) spelt flour
1/2 Teaspoon(s) Sea salt
1 Teaspoon(s) baking soda
33/50 Cup(s) (or butter) softened oil, coconut
1/2 Cup(s) sugar
1/2 Cup(s) sugar, brown
2 Teaspoon(s) vanilla extract
12 Ounce(s) chocolate, semi-sweet chips
Directions:
Preheat oven to 375 degrees. Stir flour with baking soda and salt; set aside. Beat coconut oil with sugar and brown sugar at medium speed until creamy. Add vanilla and eggs, one at a time, mixing on low speed until incorporated.

Gradually blend dry mixture into creamed mixture. Stir in chocolate chips (and nuts if desired). Drop by tablespoon onto ungreased cookie sheets. Bake for 9-11 minutes or until golden brown.
