Ingredients:
2 Pound(s) yukon gold potato
1 onion, white
4 Tablespoon(s) butter, unsalted
Directions:
Peel and cut potatoes into half inch thick slices.
Slice the onion pole to pole.

Heat the butter in a nonstick skillet over medium heat.
Add the potatoes and season with .75 tsp salt and cover.
Cook until the potatoes are just tender, but not done, about 15 minutes.
Flip occasionally to get even browning.

Turn heat down to medium low.
Add onions, half tsp of salt, half tsp of pepper.
Cover and cook about 10 minutes, stirring occasionally.

Adjust seasoning if necessary.
Serve with parsley garnish.
