Ingredients:
2 Tablespoon(s) oil, olive
1 1/2 Pound(s) sliced sausage, Italian
2 Cup(s) (or pumpkin)cut into small cubes kabocha squash
2 Clove(s) minced garlic
6 Cup(s) chicken broth
2 chopped leek
1 chopped head of broccoli
28 Ounce(s) canned fire-roasted chopped tomatoes
1 Dash(s) Sea salt
1 Dash(s) freshly ground black pepper
Directions:
In a large pot, heat the oil over medium-high heat. Cook the sausage until cooked through. Add in the pumpkin and garlic and cook until slightly softened. Stir in the remaining ingredients and bring the mixture to a boil. Reduce the heat to a simmer and cook for 20-25 minutes.
