Difficulty: Easy
Preparation Time: 10-30 Minutes
Number of Servings: 20

Ingredients:
3 Cup(s) ground cranberries
1 ground orange
1 Cup(s) sugar
1 Cup(s) chopped walnuts

Optional Ingredients:
1 Cup(s) chopped celery Add to shopping list
1 Cup(s) crushed pineapple Add to shopping list
2 Cup(s) water Add to shopping list
3 Ounce(s) red jello Add to shopping list
1 Pinch(s) salt Add to shopping list

Directions:
Make the jello with the water, let it set, then mix in all of the ingredients.

Alternately, chop the walnuts roughly.
Place the cranberries, orange slices, and sugar into the Vitamix and blend until mixed, but not smooth. Adjust sweetness to taste.
Pour into a bowl and mix in the chopped walnuts.

OR

Use one bag of cranberries (3 cups of cranberries will mostly fill a large vitamix blender, so don't use a small one)
Peel the orange mostly (I leave one small piece of peel, about 10% of the peel), then slice and place in food processor with walnuts and cranberries. Pulse until roughly chopped. Pour into a saucepan and add sugar. You may need to add a quarter cup of water if the mixture is too dry. Bring to a simmer to let the sugar dissolve and the pectin in the berries to set, about 10 minutes. Cool and serve.

This is a good dish to make first for Thanksgiving since it likes to sit awhile in the fridge before serving.
