Ingredients:
4 Cup(s) fresh rice noodles
4 Clove(s) crushed garlic
1 Cup(s) chopped (meat or tofu) chicken breast
8 Tablespoon(s) oil, vegetable
2 Cup(s) (or shredded carrots, cabbage) bean sprouts
8 cut up (leeks, spring onions) chives
8 Tablespoon(s) chopped (or cashews) peanuts
4 beaten egg
1 Cup(s) or chicken broth water
4 Tablespoon(s) fish sauce
4 Tablespoon(s) oyster sauce
4 Tablespoon(s) sugar, brown
4 Tablespoon(s) tamarind juice
4 Teaspoon(s) soy sauce
Directions:
If using dried rice noodles, bring pot of water to a boil and remove from heat. Soak noodles for 8 to 10 minutes, until al dente. Then immerse in cold water.

Place the oil in a wok and heat it over medium heat until hot. Mix all the sauces together.

Add tofu and garlic. Keep stirring until the tofu turns golden brown.

Add noodles, followed by a little water.

Keep stirring until the noodles are soft, about one minute. (Or else they stick. Stop when soft.)

Turn heat to low, and add fish sauce mixture.

Turn heat up to medium and toss noodles with bean sprouts and chives. Cook for another minute.

Remove the noodles from the wok and set aside.

Add a bit of oil to wok over low heat and add the beaten egg, and cook into a thin omelet.

Spread noodles over the omelet, and turn it over (this can a bit difficult but don't worry -- a messy omelet tastes as good as a neat one!)

Serve with roasted peanuts.

NOTES : Phad Thai is the closest thing to a Thai national dish, and you can find it everywhere -- either at a tiny street stall or in the nicest of restaurants. You can combine any number of vegetables in phad thai, and traditionally, once it is served, diners season it with chili powder, chili in vinegar, sugar, and fish sauce.

With fried noodles, always add sauce before veggies so the noodles absorb the sauce.
