2 chicken breast
1 Tablespoon(s) oil, olive
4 Ounce(s) tomato paste
4 Clove(s) chopped garlic
1 Cup(s) chicken broth
3 3-inch cinnamon stick
1/4 Cup(s) cheese, romano
In a large, deep saute pan, brown the chicken on all sides in the oil. Remove chicken from pan and pour off all but 1 TB of the fat. Put the tomato paste, garlic and chicken stock in the pan. Add the chicken and cinnamon sticks. The liquid should almost cover the chicken; add more if needed. Bring to a simmer, cover and braise until tender, about 40 minutes for chicken pieces, 30 minutes for chicken breasts. Serve over Greek spaghetti with Romano cheese.

Greek spaghetti ( Add to shopping list ) :
1 Pound(s) pasta, angel hair
1 1/2 Cup(s) cheese, romano
1/2 Cup(s) 1 stick butter
Cook spaghetti according to package directions and rinse with cold water. Place on a large platter and toss well with cheese. Melt butter in skillet until it begins to brown, stirring constantly. When butter foams and is a light brown, remove from heat and pour over spaghetti. Rewarm in microwave.
